Quick and Easy Beef Burritos

Often our weekly schedule becomes hectic and it’s up to me to find quick and easy meal solutions that do not involve take-out. I’m not always good about coming up with recipes we can use for such occasions. But recently I stumbled upon a quick and easy recipe for beef burritos from Tasty Kitchen.

I like this recipe because it is one where you can make the filling ahead of time and then assemble the burritos whenever you want. However, I’ve not tried assembling and freezing the burritos before baking. I am not that familiar with freezer cooking, so I do not know if this will freeze well or not.

I’ve included the recipe at the end of this post. Let’s walk through the steps for these delicious burritos.

First, cook chopped onion and bell pepper in a teaspoon of olive oil until softened. The recipe calls for one whole onion and one whole bell pepper. I have found that if the salsa I use in this recipe is thick and chunky with vegetables, I don’t need a whole onion or bell pepper. Half of each will do. You can freeze the other half.

Next, add a pound of lean ground beef and cook until no longer pink. Drain the excess grease and season with salt and pepper.

Add cumin, onion powder, chili powder and salsa. Stir until all the ingredients are combined.

Spray a baking sheet with non-stick cooking spray. Assemble the burritos by scooping about 1/3 cup of the beef mixture in the center of a tortilla. Top with cheddar cheese. I just eyeball this amount. You don’t want a ton or it will leak out when the burritos are baking.

Fold the sides of the tortilla toward the center. Fold up the bottom and roll to the top. Place on baking sheet, seam side down. Continue with the other burritos until you have 8.

Spray tops of burritos with non-stick cooking spray and bake for 20-25 minutes until the outside of the burritos are crisp and lightly browned.

Quick and Easy Beef Burritos

Ingredients

1 teaspoon olive oil

1 whole onion, peeled and diced

1 whole bell pepper, seeded and diced

1 pound lean ground beef

1 pinch salt

1 pinch pepper

1 teaspoon cumin

½ teaspoon onion powder

2 teaspoons chili powder

1 cup salsa

2 cups shredded cheddar cheese

8 whole large flour tortillas

Preparation

Preheat oven to 400 degrees F.

Heat olive oil in a large skillet over medium-high heat. Add onion and pepper and cook about 3-4 minutes, until softened. Add ground beef to skillet and cook until no longer pink. Drain any excess grease. Season beef with salt and pepper. Add cumin, onion powder, chili powder and salsa. Stir until thoroughly combined and remove from heat.

Lightly spray a large baking sheet with non-stick cooking spray. Assemble the burritos by scooping 1/3 cup of the beef mixture in the center of the tortilla. Add two tablespoons of grated cheese over the beef. Fold the sides toward the center. Fold up bottom and roll to top. Place on baking sheet, seam side down. Continue with remaining tortillas and beef mixture. Spray tops of burritos with non-stick cooking spray and bake for 20-25 minutes until the outside of the burritos are crisp and lightly browned.
